These soft and fluffy cheesy mashed potato muffins are easily my first choice for breakfast when I’m craving something really hearty! These savory muffins are super easy to make and are almost like throwing things together! Just mix up a hand full of ingredients and bake..the best is you can add your favourite toppings to go with it. I made these muffins with spring onions or scallions but you can easily add Jalapenos or peppers of your liking.

RECIPE: Cheesy Mashed Potato Muffins

Makes: 9 medium muffins     Prep: 10 minutes      Bake: 35 minutes

INGREDIENTS

  • Mashed Potatoes*, 2 cups
  • Grated Cheese, 1/2 cup
  • Egg, 1
  • Chopped Spring Onions, 1 cup
  • Salt and pepper, to taste
*To make mashed potatoes, boil potatoes until they’re really tender, add in warm milk, melted butter and mash them  until they’re creamy and fluffy. For 3 large potatoes you will need about 1/2 up milk and 2 tbsp butter. Make sure the potatoes aren’t too runny.

METHOD

Grease a muffin tray with oil and set aside. Preheat the oven at 180 degrees Celsius for 10 minutes.

For the muffins: Mix all the ingredients in a bowl. Start filling your muffin tray with the mixture and top with cheese.

Bake these for 35 minutes at 180 degrees Celsius or until the top is golden in color. Serve with sour cream.

There are times when you get a major cookie craving but baking a batch of 20 cookies seems like too much work and then waiting for the dough to chill..another bummer..might as well hit the store and buy a pack right? Noo..WRONG! You will not do that..at least until I’m here to give you the solution – One Giant Dark Chocolate Chip Sprinkle Cookie recipe! This cookie is ready in under 30 minutes, is SO moist, crumbly and most importantly EGGLESSS!!! 🙂

Being a food blogger means my house is almost all the time full of food..my family is not a big fan of sugar so it’s up to me eat all of it and I’m just one person, how much can I eat?! And I feel bad about baking another batch until the first one is finished so this Giant Cookie was like a blessing to me! I was over with it in a day flat. I’m almost ashamed to admit that I consumed half of this cookie in a single sitting. It’s so delicious with the right balance of chocolate, sugar and a hint of salt that I couldn’t stop myself..so consider this a warning and maybe ask someone to keep an eye on you. I wish I did 😉

RECIPE: 1 Giant Dark Chocolate Chip Sprinkle Cookie

Makes: 1 giant cookie      Prep Time: 10 minutes      Baking Time: 14 minutes

INGREDIENTS

  • Softened Salted Butter, 2 tablespoons (Amul is just fine)
  • Light Brown Sugar, 3 tablespooons
  • Dark Brown Sugar, 1 tablespoon
  • Vanilla Essence, 1/2 teaspoon
  • Flour (maida), 3-1/2 tablespoons
  • Cocoa Powder, 2 tablespoons
  • Salt, a pinch
  • Baking Powder, 1/2 teaspoon
  • Milk, 4 tablespoons
  • Chocolate Chips, a handful
  • Sprinkles, 2 tablespoons

METHOD

Preheat the oven at 180 degrees celsius for 10 minutes and line a baking tray with parchment paper. My baking tray is black which causes the base to bake faster so I layer it with foil first and then put the parchment paper on top.

In a bowl, whisk the butter until it’s light in color and fluffy, 2 minutes with a hand whisk should suffice. Add in the sugars and whisk again for 2 more minutes. Add vanilla essence and mix it in.

Sift in the flour, cocoa powder, baking powder and salt directly into the wet ingredients and mix. The dough will be dry so keep adding milk in between. You should have a cookie dough that looks like this:

The cookie dough should not be too wet or too dry..Add in the chocolate chips and sprinkles and mix them in to make sure they’re evenly distributed.

Make a ball of the cookie dough and slightly flatten it. Cover with chocolate chip and sprinkles.

Bake the cookie at 180 degrees Celsius for 14 minutes. Once baked, let it cool for 10 minutes before you lift it and transfer to a wire rack.

I’m a granola bar lover..especially because snacking on a granola bar makes me feel like I’m making the right choice. They may not be 100% healthy, but they’re definitely better than a bar of snickers! But I’ve always been skeptical about the ones you get at the supermarket so I thought of giving these a shot at home.

If  you’ve been reading my blog for sometime you might have figured out that I don’t give a damn about calories and fats..all I care about is the taste..so I took an average granola bar recipe and transformed it into something that is so freakin’ good that you will not be satisfied with just one.. 😉 You will need an entire batch for yourself! The best part about these is you need ONLY 10 minutes (no kidding) to make a batch that will last you a few days. Can it get any better?

 

If you’re making these for the first time, you’re in luck..because I’ve got lots of process pictures to guide you. So get your ingredients ready and get cooking!

RECIPE: No Bake Chocolate Chip Granola Bars

Makes: 6-8 medium sized bars   Time: 10 minutes

INGREDIENTS

  • Softened Butter, 3 tablespoons (Amul)
  • Dark Brown Sugar, 5 tablespoons
  • Vanilla Essence, 1 teaspoon
  • Quaker Oats, 1/2 cup
  • Fruit and Nut Muesli, 1/2 cup
  • Rice Puffs, 1 cup
  • Dried Cranberries, 1/3 cup (optional; you can use dried figs, cherries, raisins etc.)
  • Chocolate Chips, 1/4 cup

METHOD

Take a rectangular baking tray and line it with foil. Brush the foil with melted butter or oil. Set aside.

In a bowl, mix together, oats, rice puffs and muesli and set aside to be used later.

Transfer butter and dark brown sugar to a heavy bottomed pan.

Cook them on medium flame until they’re melted and the mixture reaches a boil. Keep stirring the mixture using a spatula to avoid burning.

Once the mixture is boiling, lower the heat and let the sugar melt completely on a really low flame for exactly 2 minutes. Keep stirring.

Once you take the mixture off the heat, add in the vanilla essence and mix it in. Now toss in the dry ingredients you set aside (oats, muesli and rice puffs) before and mix them in too along with the dried cranberries.

Transfer this mixture in the baking tray you prepared in the first step and sprinkle chocolate chips over it. Now using a spatula pat down the ingredients to get a flat surface. Make sure the granola is tightly packed.

Refrigerate this for 2 hours and then cut out bars using a sharp knife. Make sure your granola bars are thick or they will break. Keep the bars in the refrigerator. 🙂

Silky soft chocolate crepes filled with whipped cream, strawberries and chocolate chips..perfect dessert for Valentine’s Day!

Here’s another recipe you can try this Valentine’s day or any day if you’re a lover of chocolate, cream and strawberries ❤ I’m not a romantic but that doesn’t mean I can’t help all you romantics to make your V-Day special, right? These silky soft crepes are just so perfect to end your day with and are oh so easy to make. Have them filled with whipped cream or some Nutella and bananas..they taste equally good either way!

RECIPE: Chocolate Crepes

Make: 4-5 crepes    Prep Time: 35 minutes    Cooking Time: 10 minutes

INGREDIENTS

For the crepes

  •  Flour, 1/2 cup or 65 grams
  • Cocoa Powder, 2 tablespoons
  • Caster Sugar, 5 tablespoons
  • Egg, 1
  • Milk, 1/2 cup + 2 tablespoons (155 ml approx)
  • Vanilla Essence, 1 teaspoon
  • Melted Butter, 2 tablespoons

For the filling

  • Whipped Cream
  • Strawberries
  • Chocolate Chips
  • Hershey’s Chocolate Syrup

METHOD

In a bowl, whisk together egg, melted butter, milk, vanilla essence and caster sugar for about 2 minutes. Add in the flour and cocoa powder little by little and mix it in.

The batter will be runny. Let it rest for 20 minutes before cooking.

Brush a pan lightly with butter and heat it on medium flame. Once the pan is medium hot, pour 1/4 cup of batter on it and immediately start spreading the batter by twisting the pan in circular motions to make thin crepes. You have to do this quickly otherwise the batter will start to cook and won’t spread. Make sure the crepes are thin.

Chocolate Crepes with Strawberries and Whipped Cream

After a little while you will start to notice little bubbles on top of the crepe, flip the crepe once the bottom side is light brown in color and cook the other side until it has evenly browned too.

Take the crepe off the heat and let it cool slightly before spreading with whipped cream, chocolate chips and fresh strawberries. Now fold the crepe twice so as to make a triangle (like in the picture). Drizzle the crepes with chocolate syrup and finally top with some freshly whipped cream, strawberries and chocolate chips.

I’m a sucker for good breakfasts, I eat them for dinner sometimes (I ate these with tea in the evening, no kidding!)..and I just LOVE well made pancakes, not the ones our of the box but the real thing. Initially when I started cooking I did, like most of you guys, make pancakes out of the box. There’s no harm in making them but if I tell you that you can make better tasting and healthier pancakes at home with ingredients that are already in your kitchen wouldn’t that make you happy?! 😀

Blueberry Banana Pancakes

I have a pancake recipe that I love dearly, it’s my Banana and Chocolate Chip pancakes..they’re everything you want a  pancake to be..sweet, chocolaty, fluffy, moist..I could go on but I think you got the point. I just used the same recipe basically and instead of chocolate added some frozen blueberries to make them healthier! 😉 Next time, I’ll make sure I use fresh blueberries because fresh makes a whole lotta difference here. 🙂

If you wanna go 1 step ahead and make these even more healthy, just substitute half the flour for wholewheat flour and you have a guilt free breakfast ready!

RECIPE: Blueberry Banana Pancakes

Makes: 5-6      Prep Time: 10-15 mins     Cooking time: 2-3 minutes per pancake (on low flame)

INGREDIENTS

  • Flour (maida) , 1 cup or 128 grams
  • Baking Powder, 1 tsp
  • Salt, a pinch
  • Melted Butter, 3 tablespoons
  • Yogurt, 2 tablespoons
  • Banana Puree of 1 large ripe banana (whizz the banana in a blender until you form a puree)
  • Caster Sugar, 3 tablespoons
  • Vanilla Essence, 1 teaspoon
  • Milk, 1 cup or 240ml
  • Blueberries, 1/2 cup (fresh or frozen; make sure you defrost the frozen berries before using)
  • Extra Butter, for greasing

METHOD

Whisk together melted butter, yogurt, sugar, banana puree, milk and vanilla essence until everything is properly mixed. Add in the flour, baking powder, and salt and whsik until you form a smooth batter. Add in the blueberries and mix.

Heat a pan on medium flame and grease with 1/2 tsp of butter. Pour 1/4 cup of batter per pancake and cook on low flame until you see you bubbles on top of the pancake. Flip the pancake and cook the other side until golden.

Serve the pancakes with blueberry jam, maple syrup, fresh bananas and some blueberries!

PS – Don’t worry if your first pancake isn’t perfect the second one will be. 🙂
