Double Chocolate and Walnut Banana Bread

 

I have a a lot of banana recipes on my blog, from chocolate chip banana pancakes to nutella swirl banana bread and even sugar free banana muffins but nothing really compares to this Double Chocolate and Walnut Banana Bread. The combination of dark chocolate and bananas is always a winner! The best thing is unlike all my other banana recipes, this one is eggless..are you listening vegatarians!!! You can make this too..:)

RECIPE: Double Chocolate and Walnut Banana Bread

Makes: 1 loaf        Prep Time: 15 minutes     Baking Time: 45 minutes

INGREDIENTS

  • Flour, 1 cup or 130 grams
  • Cocoa Powder, 1/2 cup or 60 grams
  • Salt, 1 teaspoon
  • Baking Powder, 1 1/2 teaspoon
  • Butter, 1/2 cup or 100 grams approx.
  • Sugar, 1/2 cup or 100 grams approx. (half powdered white sugar + half dark brown sugar)
  • Bananas, 3 medium
  • Vanilla Essence, 1 teaspoon
  • Chocolate Chips, 1/2 cup
  • Milk, 4 tablespoons
  • Walnuts, 1/4 cup

METHOD

Preheat oven at 180 degrees Celsius for 10 minutes.

Grease and line a loaf tin with butter paper and set aside to be used later.

In a bowl, sieve flour, baking powder, cocoa powder and salt. set aside to be used later.

In another bowl, whisk butter until light and fluffy (about 2 minutes with hand) and add sugar to it. Whisk again for 2 more minutes until the sugar is properly combined.

Peel bananas and puree them in a hand blender. Add the pureed bananas to the butter and sugar mix and whisk. Add in the vanilla essence.

Start mixing the dry mix set aside to the wet ingredients little by little until everything is combined. Keep adding milk in between. Toss in the chocolate chips (reserve some for the top) and mix them in.

Pour this batter in the prepared tin and bake for 30 minutes at 180 degrees Celsius. Take out the banana bread and cover the tin with foil to avoid burning. Bake again for 15 more minutes at 180 degrees Celsius.

Insert a skewer to check if the bread is done. If the skewer comes out clean with a few crumbs its done. If it comes with batter on it, bake for another 5 minutes and test again.

Let the bread cool down for atleast an hour before you start slicing. Enjoy!

Banana bread keeps well in the refrigerator for upto a week.

These soft and fluffy cheesy mashed potato muffins are easily my first choice for breakfast when I’m craving something really hearty! These savory muffins are super easy to make and are almost like throwing things together! Just mix up a hand full of ingredients and bake..the best is you can add your favourite toppings to go with it. I made these muffins with spring onions or scallions but you can easily add Jalapenos or peppers of your liking.

RECIPE: Cheesy Mashed Potato Muffins

Makes: 9 medium muffins     Prep: 10 minutes      Bake: 35 minutes

INGREDIENTS

  • Mashed Potatoes*, 2 cups
  • Grated Cheese, 1/2 cup
  • Egg, 1
  • Chopped Spring Onions, 1 cup
  • Salt and pepper, to taste
*To make mashed potatoes, boil potatoes until they’re really tender, add in warm milk, melted butter and mash them  until they’re creamy and fluffy. For 3 large potatoes you will need about 1/2 up milk and 2 tbsp butter. Make sure the potatoes aren’t too runny.

METHOD

Grease a muffin tray with oil and set aside. Preheat the oven at 180 degrees Celsius for 10 minutes.

For the muffins: Mix all the ingredients in a bowl. Start filling your muffin tray with the mixture and top with cheese.

Bake these for 35 minutes at 180 degrees Celsius or until the top is golden in color. Serve with sour cream.

Chocolate Crepes

Silky soft chocolate crepes filled with whipped cream, strawberries and chocolate chips..perfect dessert for Valentine’s Day!

Here’s another recipe you can try this Valentine’s day or any day if you’re a lover of chocolate, cream and strawberries ❤ I’m not a romantic but that doesn’t mean I can’t help all you romantics to make your V-Day special, right? These silky soft crepes are just so perfect to end your day with and are oh so easy to make. Have them filled with whipped cream or some Nutella and bananas..they taste equally good either way!

RECIPE: Chocolate Crepes

Make: 4-5 crepes    Prep Time: 35 minutes    Cooking Time: 10 minutes

INGREDIENTS

For the crepes

  •  Flour, 1/2 cup or 65 grams
  • Cocoa Powder, 2 tablespoons
  • Caster Sugar, 5 tablespoons
  • Egg, 1
  • Milk, 1/2 cup + 2 tablespoons (155 ml approx)
  • Vanilla Essence, 1 teaspoon
  • Melted Butter, 2 tablespoons

For the filling

  • Whipped Cream
  • Strawberries
  • Chocolate Chips
  • Hershey’s Chocolate Syrup

METHOD

In a bowl, whisk together egg, melted butter, milk, vanilla essence and caster sugar for about 2 minutes. Add in the flour and cocoa powder little by little and mix it in.

The batter will be runny. Let it rest for 20 minutes before cooking.

Brush a pan lightly with butter and heat it on medium flame. Once the pan is medium hot, pour 1/4 cup of batter on it and immediately start spreading the batter by twisting the pan in circular motions to make thin crepes. You have to do this quickly otherwise the batter will start to cook and won’t spread. Make sure the crepes are thin.

After a little while you will start to notice little bubbles on top of the crepe, flip the crepe once the bottom side is light brown in color and cook the other side until it has evenly browned too.

Take the crepe off the heat and let it cool slightly before spreading with whipped cream, chocolate chips and fresh strawberries. Now fold the crepe twice so as to make a triangle (like in the picture). Drizzle the crepes with chocolate syrup and finally top with some freshly whipped cream, strawberries and chocolate chips.

I’m a sucker for good breakfasts, I eat them for dinner sometimes (I ate these with tea in the evening, no kidding!)..and I just LOVE well made pancakes, not the ones our of the box but the real thing. Initially when I started cooking I did, like most of you guys, make pancakes out of the box. There’s no harm in making them but if I tell you that you can make better tasting and healthier pancakes at home with ingredients that are already in your kitchen wouldn’t that make you happy?! 😀

Blueberry Banana Pancakes

I have a pancake recipe that I love dearly, it’s my Banana and Chocolate Chip pancakes..they’re everything you want a  pancake to be..sweet, chocolaty, fluffy, moist..I could go on but I think you got the point. I just used the same recipe basically and instead of chocolate added some frozen blueberries to make them healthier! 😉 Next time, I’ll make sure I use fresh blueberries because fresh makes a whole lotta difference here. 🙂

If you wanna go 1 step ahead and make these even more healthy, just substitute half the flour for wholewheat flour and you have a guilt free breakfast ready!

RECIPE: Blueberry Banana Pancakes

Makes: 5-6      Prep Time: 10-15 mins     Cooking time: 2-3 minutes per pancake (on low flame)

INGREDIENTS

  • Flour (maida) , 1 cup or 128 grams
  • Baking Powder, 1 tsp
  • Salt, a pinch
  • Melted Butter, 3 tablespoons
  • Yogurt, 2 tablespoons
  • Banana Puree of 1 large ripe banana (whizz the banana in a blender until you form a puree)
  • Caster Sugar, 3 tablespoons
  • Vanilla Essence, 1 teaspoon
  • Milk, 1 cup or 240ml
  • Blueberries, 1/2 cup (fresh or frozen; make sure you defrost the frozen berries before using)
  • Extra Butter, for greasing

METHOD

Whisk together melted butter, yogurt, sugar, banana puree, milk and vanilla essence until everything is properly mixed. Add in the flour, baking powder, and salt and whsik until you form a smooth batter. Add in the blueberries and mix.

Heat a pan on medium flame and grease with 1/2 tsp of butter. Pour 1/4 cup of batter per pancake and cook on low flame until you see you bubbles on top of the pancake. Flip the pancake and cook the other side until golden.

Serve the pancakes with blueberry jam, maple syrup, fresh bananas and some blueberries!

PS – Don’t worry if your first pancake isn’t perfect the second one will be. 🙂

Cinnamon French Toast

These soft and fluffy french toasts spiced with cinnamon are perfect for breakfast. They’re quick, easy and you have the ingredients in your kitchen already! So get started and make these!

Guess what? I’ve just found out that I had been french toast wrong my entire life! For me it was all about dunking a piece of bread in whisked egg and frying it on the pan. Well if you’re making a savory version, this technique isn’t too bad but for the sweet ones..don’t even try it! I had this idea of trying my hand at sweet french toasts last week, I made some the old way and dunked them in caster sugar and cinnamon – worst thing I’ve tasted – it was way too eggy and the sugar on top made it worse!

After a quick Google search I realized that one needs to form a custard using milk, cream and eggs, and use this mixture for dunking the bread. I tried it and voila..I made the best tasting, not at all eggy, sweet and fluffy french toasts. I added a teaspoon of cinnamon powder which made them taste even better!

Cinnamon French Toast

I didn’t make these the typical way and tweaked the recipe a bit. A lot of American recipes call for half-and-half which is basically lighter than single cream but has more fat content than whole milk, it’s not available in India, so I just used whole milk and added 2 tablespoons of cream to it. The best part about this recipe is that you do not need to go the market to shop for the ingredients, they’re lying in the kitchen right now! All we need is milk, cream (you can use Amul cream which is readily available), eggs, cinnamon powder, and some bread.

The only thing you need to be careful of is the bread you use. Do not use fresh bread which is really soft and therefore, will break if soaked in the mixture. You need bread that is at least a couple of days old and is slightly dry. That way it’ll absorb the liquid quite well without breaking.

So if you’ve been looking for a quick and easy breakfast recipe, you’ve come to the right place! Try these dangerously easy toasts and serve them warm with berries and honey! Valentine’s day is not even a month away so how about serving some of these in bed to your beloved? 😉

Cinnamon French Toast

 RECIPE: Cinnamon French Toast

Serves: 2       Prep Time: 5-10 minutes     Cooking Time: 2-3 minutes

INGREDIENTS

  • Bread slices, 4-5  (preferably 2-3 days old)*
  • Full Fat Milk/Whole Milk, 1/3 cup or 80 ml
  • Single cream, 2 tablespoons (Amul brand works fine)
  • Egg, 1 (at room temp.)
  • Cinnamon Powder, 1 teaspoon
  • Caster Sugar, 2 tablespoons
  • Butter, for frying
*Read why you need to use stale/2-3 days old bread above. To make it healthier, use multigrain or wholewheat bread. For mini versions use french baguettes. 

METHOD

In a bowl whisk together all the ingredients, except bread and butter, for about 2 minutes. Keep this custard aside to be used later.

Heat a pan and melt half tablespoon of butter on it on medium heat.

Once the butter has melted, take a bread slice and soak it in the custard for 5 seconds. Flip the side and soak the other side too for 5 seconds. (The soaking time depends on the thickness and freshness of the slice, mine were relatively thin but if you’re using thicker bread soak it longer until the liquid seeps in. Also, my bread was 2 days old therefore was slightly dry but if you’re using fresh bread give it a really quick soak , say about a second on each side or your bread will break on lifting.)

Quickly transfer the soaked bread to the heated pan and cook each side for about 3-4 minutes on medium heat until each side is nice and golden.

Dust some icing sugar on top and serve warm with fresh berries and honey or maple syrup for breakfast.
