Strawberry and Oreo Cheesecake

My current favorite dessert, this Strawberry and Oreo Cheesecake is easy to prepare, tastes heavenly and will quickly become a family favorite! P.S. – It’s also perfect for beginners in the kitchen! ūüôā

Two words – Strawberry and Oreos! Can anything in this world top that combination? Maybe chocolate and peanut butter but not after you’ve tasted this cheesecake. ūüėČ This creamy, no gelatin cheesecake is really simple to make, is no bake and takes less than 10 minutes to prepare (although you need to chill it for 4 hours later). My Strawberry and Oreo Cheesecake tastes heavenly and is bursting with fresh strawberry flavor! Nothing artificial here you guys!! Oh and all you newbies in the kitchen, read on because it’s perfect for you guys!

Like all cheesecakes, my cheesecake too has a biscuit base but to take things to the next level I used Oreos instead of the regular digestives. The taste of Oreos complement the sweetness and slight tartness of the cheesecake. I didn’t remove the cream from the centre so the base is nice and soft! My cheesecake is made of cream cheese and whipping cream, this is a no gelatin cheesecake so all you really have to do is whip some cream and mix it in with cream cheese and icing sugar and VOILA..you have your batter ready! You also need to add some pureed strawberries..the puree shouldn’t be too watery but more on the chunky side. This give the cheesecake that real strawberries flavour. When this is done, you just need to set the mixture in the refrigerator for 4 hours and DONE!

Don’t panic if you’ve never made a cheesecake before because it is ridiculously easy to make! I’ve got lots of process pictures to guide you throughout so you’ll be alright! ūüôā

RECIPE: Strawberry and Oreo Cheesecake

Makes: One 8″ Cheesecake    Prep Time: 15 minutes    Chilling Time: 4 hours +

INGREDIENTS

  • Cream Cheese (at room temp), 200 grams (You can use Philadelphia or Britannia)
  • Sweetened Whipping Cream (40% fat or more), 200 grams (I use Rich’s whipping cream)
  • Icing Sugar, 1/2 cup or 60 grams
  • Vanilla Essence, 1/2 teaspoon
  • Fresh Strawberries (Pureed), 8-10 small*
  • Fresh Strawberries, 7-8 sliced, for the top
  • Oreos, 1 pack of 150 grams
  • Melted Butter, 3 tablespoons
  • 8″ Springform tin (or loose bottom tin)
*For the strawberry puree – Blitz strawberries minus the leafy part in a blender until they’ve broken down. The mixture has to be between watery and chunky. Watery puree will make it difficult for the cheesecake to set so make sure you get the consistency right. Refer to the pictures below.

METHOD

Blitz Oreos in a mixer until they’re crumbly and are almost sand like in texture. Add in the melted butter and blitz again. Once the Oreos and butter are properly mixed tip this mixture onto the bottom of a springform tin and press them down to make a nice tight base. Use a spatula or the back of a glass to make the base smooth and flat.

Chill the base in the freezer until you make your cheesecake batter.

Whisk your whipping cream until you have stuff peaks and set it in the refrigerator to be used later.

Whisk the cream cheese until it’s nice and fluffy, add in the icing sugar and whisk again. Add in the vanilla essence and mix it in. Now take out the whipped cream you set in the refrigerator and fold it in this cream cheese mixture little by little using a spatula. Make sure you don’t mix very vigorously. Mix enough to combine the cream cheese mixture and whipping cream properly. Now add in the pureed strawberries and fold them in.

Make sure your strawberry puree isn’t too watery. Keep it chunky.

Next, take out your base from the refrigerator and pour your batter in it. Chill in the fridge for atleast four hours, preferably overnight.

Once your cheesecake is set, demold it and transfer it to cake plate. To do that, run a knife along the edges and then run it under the base to loosen the base. Once the cake if off the base, simply slip it onto a serving plate. Top with sliced strawberries and serve chilled.

TIP: To get a neat slice every time, clean your knife before making every cut. 

I don’t have any clue how long the cheesecake stays good for because in my house it’s over in no time! Let me know if you know ūüôā

Silky soft chocolate crepes filled with whipped cream, strawberries and chocolate chips..perfect dessert for¬†Valentine’s Day!¬†

Here’s another recipe you can try this Valentine’s day or any day if you’re a lover of chocolate, cream and strawberries ‚̧ I’m not a romantic but that doesn’t mean I can’t help all you romantics to make your V-Day special, right? These silky soft crepes are just so perfect to end your day with and are oh so easy to make. Have them filled with whipped cream or some Nutella and bananas..they taste equally good either way!

Chocolate Crepes with Strawberries and Whipped Cream

RECIPE: Chocolate Crepes

Make: 4-5 crepes    Prep Time: 35 minutes    Cooking Time: 10 minutes

INGREDIENTS

For the crepes

  • ¬†Flour, 1/2 cup or 65 grams
  • Cocoa Powder, 2 tablespoons
  • Caster Sugar, 5 tablespoons
  • Egg, 1
  • Milk, 1/2 cup + 2 tablespoons (155 ml approx)
  • Vanilla Essence, 1 teaspoon
  • Melted Butter, 2 tablespoons

For the filling

  • Whipped Cream
  • Strawberries
  • Chocolate Chips
  • Hershey’s Chocolate¬†Syrup

METHOD

In a bowl, whisk together egg, melted butter, milk, vanilla essence and caster sugar for about 2 minutes. Add in the flour and cocoa powder little by little and mix it in.

The batter will be runny. Let it rest for 20 minutes before cooking.

Brush a pan lightly with butter and heat it on medium flame. Once the pan is medium hot, pour 1/4 cup of batter on it and immediately start spreading the batter by twisting the pan in circular motions to make thin crepes. You have to do this quickly otherwise the batter will start to cook and won’t spread. Make sure the crepes are thin.

After a little while you will start to notice little bubbles on top of the crepe, flip the crepe once the bottom side is light brown in color and cook the other side until it has evenly browned too.

Take the crepe off the heat and let it cool slightly before spreading with whipped cream, chocolate chips and fresh strawberries. Now fold the crepe twice so as to make a triangle (like in the picture). Drizzle the crepes with chocolate syrup and finally top with some freshly whipped cream, strawberries and chocolate chips.

RECIPE: Dessert Kebabs – Strawberries, marshmallows and brownies on skewers drizzled with melted chocolate

Serves: 3-4      Time: 10 minutes

INGREDIENTS:

  • Fresh Strawberries, cored and halved
  • Marshmallows
  • Brownies, cut up in small pieces*
  • Melted Chocolate
  • Skewers
*You can use any store bought chocolate cake or brownies, I used my 2 ingredient nutella brownies)

METHOD:

Cut up strawberries in two pieces length wise, and thread one piece onto the skewer followed by a piece of brownie and marshmallow, finish off with the other piece of strawberry.

Make as many kebabs as you please, and drizzle them with melted chocolate before serving.

Other combinations that you can try – bananas and brownies topped with nuts, fresh fruits with plain sponge cake, mini pancakes with bananas, mini french toasts with strawberries. The possibilities are endless!

Bounty Balls

These bite sized coconut filled chocolate balls are perfect for desserts and taste so much like Bounty bars. The best part? You only need 3 ingredients to make these.

I love Bounty bars and who doesn’t? They’re what we all have grown up eating. Those small bars with moist coconut centre and that lush chocolate layer on the outside can make a dull day so much better. That moist coconut is what I loved about it..so perfect, nothing could come close to it! Because I love coconut so much, I naturally fall for anything even remotely coconuty..so it shouldn’t come as a surprise to you that I LOVE coconut ladoos.

Last year for Diwali I made some really easy coconut ladoos made with only 2 ingredients and they were a HUGE HIT! Everyone in my family loved them and no one could ever guess that it took me less than half hour to make a dozen of them, which includes chilling time btw! Yup..that easy and that quick. So I thought why not roll those baby ladoos in some chocolate and see how they taste..and VOILA..i had ball shape Bounty bars in my hand! You only need 3 ingredients and roughly 45 minutes for these..trust me, it can‚Äôt get any easier than this! Oh..and let’s not forget the part where they taste like Bounty bars..I swear they do! And they taste so YUMM! ‚̧

You can serve these up for desserts or for tea time..they taste lovely no matter what season you make these in!

Bounty Balls

RECIPE: Bounty Balls

Makes: 15-20 balls       Time: 45 minutes

INGREDIENTS

  • Condensed milk (milkmaid), 1 cup
  • Desiccated Coconut (dry coconut), 2 cups
  • Dark Chocolate, 100 grams, melted

PROCESS

Mix desiccated coconut and condensed milk in a bowl until you form a dough. Refrigerate this dough for about 10 minutes so that it becomes easier to handle.

Take out the dough after 10 minutes and make balls out of it. Chill in the refrigerator, in the meanwhile you can melt your chocolate.

Take out the balls from the refrigerator and dip them in the melted chocolate, twist and turn it so that the melted chocolate covers the balls completely.

Lift the balls out using two forks and line on a tray covered with foil paper. Freeze until the chocolate is set (not more than 15 minutes) then transfer the balls to the refrigerator.

Bounty Balls

Store these uncovered in the refrigerator for upto 2 weeks.

Serve for desserts!

This Banana and Toffee pie is the easiest no-bake dessert ever. A British classic..Banoffee Pie is one of my favorite desserts!

I’m starting to feel that¬†“Sugar & Spice by Radhika” can easily qualify as a dessert blog now..2 out of 3 recipes on this blog are sweet and recently I’ve been sharing soooooo many dessert recipes in the form of muffins, cupcakes, cakes that I’m starting to feel the sugar in my system (…because I eat all this food.. ūüėÄ I swear I do!). I’ve got so many reliable recipes that I make ever so often..but if you ask me if there’s any one recipe that I rely upon or use as my go-to recipe when I’m in a hurry, its this Classic Banoffee Pie recipe that I found off the internet about a year ago. Its so simple and takes around 30 minutes to make.. then you have to refrigerate it for another 30 minutes to allow the toffee to cool down and you’re set. So if you have a dinner party around the corner and need a quick yet impressive dessert fix, this is it. This Classic Banoffee Pie is what you need to make!

This no-bake banana and toffee pie is a layered dessert with crushed biscuits on the base almost like a cheese cake.. which is followed by a layer of ¬†fudgy homemade toffee (easy to make so don’t stress). The toffee is made fresh in this recipe but if you wish and have access to canned toffee you can use that too (don’t know how well that sets though). Once the hot toffee layer cools down its basically done. All you need to do is top it with fresh bananas and whipped cream. I like to sprinkle some grated chocolate on top to make it look pretty, so do that too!

Clearly I’m not a pro at making food look great..but I can make it taste divine. The biscuit base is not clearly visible on the above picture but it’s there.. trust me..I don’t regret it though, I like it that way..sparce..because too much of the biscuit base makes the dessert taste a teensy bit salty, which I do not appreciate. So I’ve intentionally kept that thin. Thin biscuit base will cause problems in holding up if you’re ¬†not using a springform tin but just be very patient when you’re cutting a piece out and you’ll get it…patience is the key here folks!! ūüėÄ

Classic Banoffee Pie

RECIPE: Classic Banoffee Pie

Makes: One 6″ pie ¬† ¬†Time: 30 minutes + extra refrigeration

INGREDIENTS

For the Biscuit Base

  • McVities Digestive Biscuits, 13-14, crushed
  • Melted Butter (preferably unsalted), 3 tablespoons

For the Toffee

  • Condensed Milk/Milkmaid, 125 grams
  • Butter, 2 tablespoons
  • Dark Brown Sugar, 1 1/2 tablespoons

For the Toppings

  • Fresh Bananas, 2, sliced
  • Freshly whipped cream (I use Rich’s whipping cream, which is available in all major store across Delhi)
  • Chocolate, grated

Equipments

6″ pie dish or springform tin

METHOD

Crush the biscuits into a really fine powder. You could bash them in a cloth with a rolling pin or use a blender to do it for you. Once thats done, add in the melted butter to it and mix. Take your pie dish or springform tin toss this mixture into it. Now using the back of a spoon or a spatula press down the mixture and cover the base and the sides. Press well so that its nice and tight. Now freeze this for 15 minutes.

Once your base ¬†has frozen transfer it to the refrigerator while you prepare the second layer, the toffee. In a pan , melt butter and sugar together until they’re combined and the sugar has melted completely. This has to be done on a LOW FLAME¬†or the sugar will burn.

Add in the condensed milk once the sugar has melted and increase the heat to high. Boil this mixture while STIRRING CONSTANTLY for about 1 1/2 to 2 minutes. Please do not forget to stir throughout this boiling process or your toffee will burn.

Layer this hot toffee sauce over your base and pat it down using a spatula to form an even layer and refrigerate for 30 minutes to 1 hour.

When you’re ready to serve take out the pie dish from the refrigerator and top the toffee with freshly cut bananas and freshly whipped cream (Whip your cream for good 3-5 minutes or until it forms stiff peaks). Grate some chocolate on top and serve! You can also refrigerate it for another hour for it to chill. Eat the same day or the bananas will turn brown.
