Classic Tomato Sauce

Homemade Pizza Sauce (Improved Version)

There are two types of people on this planet, tomato sauce lovers and cheese sauce lovers. I am the former and for that same reason I’m always on the lookout for great tomato sauce recipes. I have a recipe that I normally use to whip up a simple spaghetti but this sauce is something else. It has no onions or garlic and is closest to the real deal! This Classic Tomato Sauce is great over homemade pizzas, pastas or even a dipping sauce and I got it from the Instapizza, an upcoming pizza chain restaurant in Delhi, India. I loved their pizzas and their sauce so I asked them for the recipe for it. The folks at Instapizza were kind enough to give it to me so here I am sharing it with you! Try this really simple recipe with step-by-step instructions and take your pizzas to another level!

RECIPE: Classic Tomato Sauce

Makes: 2 cups or 500 ml of sauce       Time: 1 hour

INGREDIENTS

  • Fresh Juicy Tomatoes, 7-8
  • Olive Oil, 3 tablespoons
  • Pizza Seasoning, as per taste (My pizza seasoning is a mix of garlic powder, dried rosemary, dried basil, dried thyme and dried oregano; you can season it with your favorite seasoning)
  • Salt, to taste
  • Sugar, 2 teaspoons

METHOD

Start by boiling your tomatoes. Take a pot, fill it water, and bring it to a boil. Toss your tomatoes in it and boil for about 5-10 minutes or until tomatoes are really tender.

Homemade Pizza Sauce (Improved Version)

Once they’re boiled, drop the tomatoes in ice cold water and take their skins off. Once the skins are off, blitz them in a food processor until you have a smooth tomato puree. You can go one step further and sieve the tomato puree to get a super smooth consistency but I don’t bother. I like it rustic.

Pour olive oil in a heavy bottomed pan and transfer your tomato puree to it. Bring it to a boil, and then simmer. Let the sauce cook on medium heat for about 20-25 minutes until it has thickened and developed a deeper colour. Keep stirring. Remember, the longer you cook your sauce the better it will taste.

Season your sauce and let it cool before you top it on pizzas, for pastas you can use it straight away. If the sauce is too thick add a little hot water to thin it down and adjust seasoning.

Ingredients that you probably overlooked as being too simple or too common..well, my recipe for this Greek Tzatziki dip is going to use just those ingredients! It’s as simple as 1,2,3 and takes about 10 minutes in total. It fresh, light and goes great with fresh vegetables, over meats or with crackers! For this dip you need: yogurt, cucumber, garlic, olive oil and lemons..yes just that. So get them ingredients ready and make this dip already!

RECIPE: Homemade Greek Tzatziki Dip

Serves: 2-3     Time: 10 minutes

INGREDIENTS

  • Strained Yogurt (hung curd), 1 cup
  • Olive oil, 2 tablespoons (or mayonnaise; using mayo is not traditional but works well)
  • Grated Cucumber, 1
  • Lemon juice, 1 teaspoon
  • Grated Garlic Cloves, 2
  • Salt and Pepper, to taste
  • Dill, Parsley or Coriander, chopped

METHOD

In a bowl mix yogurt and olive oil until you get a creamy consistency. Add the remaining ingredients and adjust the taste as per your liking. Serve with carrots and cucumbers or crackers. This dip goes well with lamb dishes as well so serve it as a side dip for meats too.

I made Pita Chips with Roasted Red Pepper Hummus(again super easy) a little while back..they were a hit at my house! Those crispy munchies were perfect for a person like me who likes to chomp on something while watching a movie or a TV show.  My family loved those super crunchy pita chips and that hummus was the creamiest I’ve ever had. The idea to make Tortilla Chips was actually inspired from that recipe and these chips were again a hit!! I guess its got something to do with my family loving crispy food. :p But I promise you’re going to love them. You can even dress these Tortilla chips and make Nachos at home. Just load them up on a plate and serve with salsa, guacamole (my recipe here) and some sour cream. I love a few spring onions here and there..and maybe some cheese too.. they taste great!

These chips are very versatile. I’ve made the most basic version..with olive oil and salt but you can add in a little paprika and some dried herbs if you like! They’re a super food and never fail to impress guests. Wait till you tell them that these are homemade and they’ll shower you with praises! I can bet you on that ! 😀

 RECIPE: Homemade Tortilla Chips with Chunky Salsa

Serves: 3-4       Prep Time: 5-10 minutes       Baking/Frying Time: 7 minutes/2 minutes

INGREDIENTS

For the Tortilla Chips

  • Tortillas, 4
  • Olive Oil, to brush
  • Salt, to taste

For the Chunky Salsa

  • Tomatoes, 3, diced
  • Onion, 1, Diced
  • Coriander/Cilantro, a handful, chopped
  • Jalapenos or Green Chillies, 2, chopped
  • Lemon Juice, 1-2 tablespoon
  • Salt, to taste

METHOD

For the Tortilla Chips

Preheat your oven at 180 degrees Celsius for 5 minutes.

Using a pizza cutter, divide a tortilla into 8 equal triangles (like a pizza). Line the tortilla pieces on a baking tray, brush each piece with olive oil on both sides, sprinkle salt and bake for 5-6 minutes at 180 degrees Celsius. Alternatively, deep fry the tortilla pieces in a medium hot oil  until golden and dry on a kitchen paper. (DO NOT LET THEM BROWN; take them out when golden).

For the Salsa

Mix all the ingredients together in a bowl and season according to your taste.

Serve Tortilla Chips with Chunky Salsa and get ready to be praised.

Everyone loves hummus and this time I made it with smoked red peppers! This roasted red pepper hummus is an irresistible treat and is best eaten with my homemade pita chips! It could easily win the “Munchies of the Year” award !

Need a party snack that will make everyone go bananas, yet be simple enough to not make you crazy?! You’ve come to right place. My homemade hummus is perfectly flavored with sweet and smokey red bell pepper and is accompanied with my homemade pita chips that have the best crunch you’ve ever witnessed! I swear that’s true. These pita chips are unbelievably crunchy and after you eat these you would never wanna eat or buy market bought ones.

I’ve made hummus before and it turned out amazingly good (If you’re not a big fan of bell peppers check out my classic hummus recipe here) but I had never made pita chips at home before this. I was compelled to make them at home because I don’t like to eat those market bought ones for the simple reason that they’re all broken. I open the packet and I see powder all over with a few whole pita chips and it breaks my heart to eat those. So I decided to bake my own and I’m never going back. They’re so simple to make and take 10 minutes. You could make your hummus while they’re baking so its all coordinated pretty nicely!

Hummus is a healthy snack (read about its health benefits on google, I will not bore you with details but its really good for you) plus the pita chips are baked not fried so you could eat it all up with no guilt later, how cool is that? 😀  Its super quick too except the pepper roasting part which will take about 20 minutes but you could easily use canned roasted pepper to cut down the time. Other than that it’ll pretty much take 10 minutes including the baking time for your pita chips. The pita chips that you see in the pictures have been baked for 10 minutes but I feel like that’s too much and my chips  turned out browner than I would’ve like them to be so I suggest you to not go beyond 5 minutes without checking them first. At 5 minutes my chips were light brown and they looked great. You could bake an additional 1-2 minutes for extra browning but never 10. Its really simple to put together, I’ll get on with the recipe so you can start making it!Homemade Pita Chips

Roasted Red Pepper Hummus

RECIPE: Roasted Red Pepper Hummus with Homemade Pita Chips

Serves: 3-4     Total Time: 30-35 mins

INGREDIENTS

For the Red Pepper Hummus

For roasting the bell pepper

  • Red Bell Pepper, 1 Large
  • Olive Oil, 3 tablespoons (for roasting bell pepper)
  • Salt and pepper, to taste

For the dip

  • Boiled Chickpeas, 1 Cup (You can use canned)
  • Yogurt, 1-2 tablespoons
  • Garlic Cloves, 3
  • Lemon Juice, 1 tablespoon
  • Fresh Coriander, Chopped, 1/4 cup
  • Olive Oil, 2 tablespoons (for the hummus)
  • Water, 1/8 cup
  • Salt and red chilli powder, to taste

For the Pita Chips

  • Pita Breads, 3
  • Olive Oil, 2 tablespoons
  • Fresh garlic, chopped, 1 teaspoon
  • Cumin Powder, 1/2 teaspoon
  • Ground Pepper, salt and Red Chili Powder, to taste

METHOD

Slice the bell pepper in 2 halves, place them on a baking tray (skin side up) and Drizzle about 3-4 tablespoons of olive oil over it, sprinkle salt and pepper and roast (or broil; only top grill on) at 180 degrees Celsius for 20 minutes.

Start preparing your pita chips while the bell pepper is roasting. Using a pizza cutter cut the pita bread into 8 equal triangles. Line them on a baking tray. In a bowl, mix together olive oil, garlic, salt and pepper as mentioned under “for the pita chips”  and brush this mixture on top of the sliced pita breads. Keep aside.

Once your peppers are done, take them out and bake the pita chips for 5-7 minutes (keep an eye on them, they brown very quickly). You normally would need to preheat the oven at 180 degrees Celsius for at least 5 minutes but since the oven is already hot from roasting the peppers you can just pop these in.

Peel the skin of the bell pepper carefully and add it along with other remaining ingredients under ” for the dip” and blend them all in a food processor for a few minutes or until it resembles a fine paste. Taste to see if it needs anything.

Serve cold with pita chips on the side!

Summers are here and so are the summery fruits! 😀 I’m always confused about seasonal fruits but I know for sure that mangoes belong to summers. When I saw these at the supermarket the other day I knew I had to create something with these. I’ve a little sick lately (which would explain why I didn’t post anything for 10 days) and all I’ve been eating is really bland food. I needed a break so I created something zesty to pep up my taste buds and say bye bye to my sickness.

This mango salsa was a spur of the moment thing. I had tortilla chips and I had mangoes, so why not make salsa? I know a lot of people will be repulsed by the thought of a ‘sweet’ salsa dip but trust me, this dip is nowhere close to being sweet. Its a perfect combination of sweet and spicy goodies mixed in a bowl which shouts “SUMMERSSSS” 😀 Everything is great about this dip, I mean EVERYTHING. The mangoes give the salsa a new twist that it becomes physically impossible to stop eating it. Its a great party food to be shared and even better when you have it all to yourself! I loved eating it with plain salted tortilla chips but you can go nuts and eat it whatever you fancy. This mango salsa is also a great side dish for chicken!

It is also immensely easy to put together like a salsa is, all you need are a few other veggies cut neatly (or not) seasoned with a little salt and red chili powder and a tablespoon of lemon juice. You will have a wonder in your hand! I added a few strawberries too for a little kick too and they tasted great too. Try it and you will never go back to the regular boring salsa.. I promise!

 RECIPE: Summery Mango Salsa

Serves: 2

Time: 10-15 minutes

Ingredients

  • Mango, 1 large, peeled, cored and chopped
  • Tomatoes, 2 small, deseeded and chopped
  • Onion, 1 medium, chopped finely
  • Capsicum or green bell pepper, half, chopped
  • Strawberries, 2-3, chopped
  • Coriander, a handful, chopped
  • Lemon Juice, 2 tablespoons
  • Caster Sugar, 1 teaspoon (if your mangoes aren’t too sweet)
  • Salt and Red Chili Powder, to season

*You can add a few Jalapenos or Green Chilis to make it more spicy.

Method

Mix all the ingredients in a bowl and season with salt and  red chili powder. The spicier the better! This mango salsa is best eaten fresh with salted tortilla chips, as a side dish or as a filling for tacos or fajitas.

Lebanese food is in rage these days, from shwarmas to falafel, people are going crazy about it. Hummus with pita breads is a popular appetizer at restaurants and I wanted to replicate that flavor at home. Until about a few days back I thought one needs tahini to make hummus but I was wrong. When I saw Dimple’s Smoked Paprika and Lemon Hummus post, I was stunned to discover that hummus could be made without tahini. Tahini is a sesame seed paste which is ideally used in making hummus but skipping it won’t make a lot a of difference, in fact no difference at all.

I love hummus and who wouldn’t, its a refreshing healthy dip which is ready in a jiffy. Its made with chickpeas or garbanzo beans, which are protein rich and free of cholesterol, olive oil, which is a healthy form of fat along with garlic and lemon which are great antioxidants. The great thing is I’ve skipped tahini which is brimming with fats and calories. I’m not crazy about health food but eating healthy once in a while can do no harm, can it? 😉 This dip is also very versatile and goes with just about anything. From pita bread to crackers to potato wedges, enjoy this hummus dip with your favorite munchies.

Recipe: Easy Hummus

Easy Hummus Recipe without tahini

Ingredients:

Makes: 1 cup Hummus dip (240 ml)

Time: 10-15 minutes

  • Chickpeas, 1 cup, boiled and drained or canned will do
  • Yogurt, 1-2 tablespoons
  • Olive Oil, 2 tablespoons
  • Garlic, 2  cloves (trust me they’re more than enough)
  • Lemon Juice, 1 tablespoon
  • Fresh Coriander, chopped, 1/4 cup
  • Water, 1/8 cup
  • Salt and red chili powder, to taste

Process:

Blend all the ingredients in a food processor until you form a fine paste. Add more water if the dip appears sticky. Season well and serve with toasted pita bread chips or crackers!

Yeah, that’s it. Not eating hummus at restaurants now, are you? 😉

TIP: Make fresh hummus every time. Refrigerated hummus loses a little flavor, tastes best when fresh.

Quick and Easy Guacamole Dip

Guacamole is a Mexican dip which is pretty much like salsa, only made with avocados which makes the texture really creamy! Its really easy and takes about 5-10 minutes in total to make. It’s a gorgeous dip, my family’s absolute favourite. I’m sure you’ll love it too!

My guacamole beats the cheap supermarket version every time, even if you buy an ‘expensive high quality’ guacamole I’m pretty sure it won’t be as good as an homemade one.

P.S. People from Mexico, I know it’s basic stuff for you, but there are plenty of people out there who still don’t know something as heavenly as Guacamole exists! So accept my apologies when I post a really basic recipe! :)

Ingredients:

2 large Ripe Avocados

1 medium Red Onion Chopped

1 medium Tomato Chopped

1/2 cup Chopped Fresh Coriander

Juice of 1 Lemon

Salt for seasoning

Process:

Serves: 4

Prep time: 5 minutes

Assembling time: 2 minutes

Step 1: Really easy, take 2 ripe Avocados.
Step 2: Cut the Avocados in the middle, they have a stone in the centre so cut alongside it and pull the either sides of avocados apart. As shown in picture no 2, spoon out the insides.
Step 3: Whizz the avocado flesh in a food processor so that it becomes like a paste. Leave out a few pieces here and there. Add in the chopped tomato, onion, coriander, salt and lemon juice.
Step 4: Mix well and it’s done!
Easy Peasy!

Serve your guacamole in a fancy dish with nachos, alongside salsa and sour cream. Perfect game time snack! Or use it as a filling for your fajitas, burritos or enchiladas!

You could just take a spoon and simply eat it too! :D
