Frozen Strawberry Daiquiri

A simple recipe to make frozen strawberry daquiris at home in no time! It’s fruity, zingy and sweet, just how we girls like our cocktails! Save this one for a girls night in 🙂

Frozen Strawberry Daiquiri

Who doesn’t love a good cocktail and if it comes with strawberries..I’m all set for a good night! This frozen strawberry daiquiri is great to make on a girls night in and I can assure you that all your girls are going to love it even the ones who detest the taste of alcohol, I swear. It’s made of real strawberries (no flavour) so it tastes every bit fruity and not at all artificial. I froze the strawberries before adding them so I got the really nice crushed ice texture, do not skip this step, I promise you’ll feel you’ve been rewarded for your patience once you taste it. There are a lot of party places in Delhi but when I do feel like going out and experiencing the nightlife in Delhi there are only a handful of places that I absolutely love. Social offline is great for cocktails, and so is PCO, Hungry monkey and Fio but my current favourite has to be Farzi Cafe with it’s innovative drinks like Chuski Margarita and Santa Banta. Well, it was after a night at Farzi Cafe that I decided to whip up some delicious cocktails and as a result made this ever so delicious Frozen Strawberry Daiquiri.

Frozen Strawberry Daiquiri
This Frozen Strawberry Daiquiri tastes every bit fabulous as it looks..and you must must must give it a shot! Now, the only downside to this is, because this cocktail is frozen you cannot make it beforehand. You’re going to have to make it on the spot, but that could be fun, right? Play bartender for the night, shake up some drinks, I’m sure you’ll love it! Just get the ingredients ready – freeze your strawberries, juice your lemons and you’re all set to go!

RECIPE: Frozen Strawberry Daiquiri

Serves: 2     Time: 5-10 minutes

INGREDIENTS

• Frozen Strawberries, 8-10 (preferably ripe; take fresh strawberries and freeze them until rock solid)
• Sugar Syrup, 3-4 tablespoons
• Lemon Juice, 1 tablespoon
• Vodka, 30 ml (or more if you prefer)
• Ice cubes, 5-6
• Club Soda*, 60ml
• Salt and Lemon Wedge, for rimming

*Daiquiris are tradionally not made with club soda but I add some to thin down my cocktail, you can skip it if you like.

METHOD

Prepare the glasses by moistening the rim with lemon juice. To do so, rub a lemon wedge on the rim of the glass and then dip the glass (rim side down) on a plate sprinkled with lots of salt. The salt will instantly stick to the moist rim and a perfectly rimmed glass will be ready. Set the prepared glasses aside.

In a blender, mix the sugar syrup, lemon juice, and vodka. Add in the frozen strawberries and ice blend until the ice is crushed and so are the strawberries. Taste and adjust lemon juice and sugar syrup as per your taste. If you need more vodka, add more now along with the club soda.

Mix the cocktails and pour in the prepared glasses! Finally..enjoy!

Kiwi Basil Lemonade

This kiwi basil lemonade is just what you need on a really hot day! Not too tangy, not too sweet…its something everyone will love!

Kiwi Basil LemonadeKiwi Basil Lemonade

Summers in Delhi can be too hot to handle..and its not even raining yet, so it gets pretty unbearable. If you’re a Delhiite you know what I mean and you probably have a refrigerator full of lemons, tang and coconut water to beat the heat too. I keep my refrigerator stocked with plenty of fluids but sometimes a simple lemonade is not enough to quench that thirst, I had no intention of coming up with this brilliant idea but I had a few kiwis lying around that were super ripe and needed to be used asap, so I pureed them and added the puree to my lemonade and It tasted like pure *BLISS*.

Basil is something I added to add a kick to the lemonade, I wanted to use it in my drinks for quite sometime now so I did here..and it tasted spectacular. The flavour wasn’t overpowering and it tasted great against the tanginess of the kiwi and lemons. This Kiwi Basil Lemonade really is perfect for this weather and so easy, you can just make it anytime you want ! As a bonus, this lemonade looks fancy too..so if you’re having guests over, I’m sure they’d appreciate a glass  pitcher full of this stuff. :p

RECIPE: Kiwi Basil Lemonade

Makes: 2 glasses    Time: 5-10 minutes

INGREDIENTS

  • Lemon Juice, 2 tablespoons
  • Sugar Syrup, 2-3 tablespoons
  • Black Salt, 2 pinches
  • Water, 2 glasses
  • Kiwi Fruit, 2 (make sure its ripe)
  • Basil Leaves, a few
  • Ice Cubes

METHOD

Peel the kiwis and puree them along with a few basil leaves.

In a jar mix together lemon juice, sugar syrup, black salt and water. Add in the kiwi basil puree and ice cubes. Mix it up and its ready!

Sunrise Smoothie with Pineapple and Mango

This is one smoothie you would want to drink the minute you wake up. Bursting with flavors, this all fruit, no dairy smoothie is a perfect breakfast drink!

Sunrise Smoothie with Pineapple and Mango

This smoothie is no frills, super easy and extremely quick. All you need to do is throw in all the ingredients in a mixer and whizz them up. My kinda drink after a long tedious day.

After being awake last night for way too long, followed by an early morning and then a round of  grocery shopping on a super hot day in Delhi I was neither in a mood to cook nor eat! All I could think of was a cool refreshing drink and me sipping it in peace, that’s when I made it. Its really fruity, I’ve added coconut water as a base but you can add coconut milk too, I’m pretty sure that’ll taste divine.

So let’s talk about this beauty before I fall asleep. :p

Sunrise Smoothie with Pineapple and Mango

RECIPE: Sunrise Smoothie with Pineapple and Mango

Makes: 1 tall glass        Time: Not even 5 minutes

INGREDIENTS

  • Pineapple, Chopped, 1/2 cup
  • Mango, Chopped, 1/4 cup
  • Fresh or packaged Coconut Water, 2/3 cup
  • Frozen Banana, 1 (you can use 2-3 tablespoons of yogurt instead)
  • Sugar Syrup, 1 tablespoon

METHOD

Blend frozen banana in a mixer until it resembles a soft serve ice cream. It’ll look very grainy at first but then It’ll turn smooth. Keep blending until it does.

Add in the remaining ingredients and whizz again until the smoothie is nice and smooth. Pour in glasses and serve.

You can also add crushed ice into the mixer if it can handle it. However, if your mixer is not equipped to crush ice, freeze your ingredients beforehand and then blend them. The smoothie will be cold without using any ice.

Hope you try this. If you do, let me know! I’d love to know what you thought of it. Why don’t you try it with coconut milk instead of coconut water..A virgin Pina Colada!? 😀

Skinny Mango Smoothie Skinny Mango Smoothie

The Indian summer is here..its not hot as usual (lucky for us) but the fruits are rolling in..The mangoes are as juicy as ever and I’ve used the ripest one I could find for this smoothie. This smoothie isn’t like the regular ones where you use yogurt (I dislike yogurt-ey taste in a smoothie) but instead I’ve made it using a very special ingredient to thicken it up. Frozen Bananas. Those two magic words have literally changed the way I work and think in the kitchen now. Frozen bananas not only thicken up the smoothie but also give out no flavor to it. Win- Win right? 😉 The mangoes mask it very nicely and its impossible to guess that there are bananas in it. You can bet on it..

A handful of ingredients and a mixer is all you need. So lets get started and make the summer drink of the year..shall we!!?

Skinny Mango Smoothie

RECIPE: Skinny Mango Smoothie

INGREDIENTS

Serves: 2     Time: 10 minutes

  • Frozen Banana, 1 (peeled and frozen for a few hours)
  • Ripe Mango, 1 Large
  • Skimmed Milk, 3/4 Cup (or 180 ml)
  • Vanilla Essence, 1/2 teaspoon
  • Honey, 1 teaspoon
  • Ice Cubes
  • A good strong mixer

METHOD

Blend the frozen banana in the mixer for a few minutes until it becomes white and creamy, almost like a soft serve ice cream. Like this:

Skinny Mango Smoothie

Once the bananas are creamy add in all the other ingredients and mix for a few seconds (including ice cubes) until the ice is crushed and the smoothie is nice and creamy and thick.

Serve Cold on a hot summer day, by the pool or not by the pool! 🙂 Enjoy!
